I’m not going to lie, moving definitely has it’s challenges. Our biggest challenge at the moment? Not having a working stove. That means no range and no oven, pretty much the worst thing that could happen to two paleo eaters. While we definitely broke down and ordered take-out to get us through the first few nights, a grocery run and some diligent planning has helped us get back on track.
Our Ninja Cooking System has pretty much saved dinner. We’ve been whipping up yummy slow cooker meals like Pineapple Pulled Pork, Salsa Chicken, and Chicken Chili.
Baking on the other hand has been a bit more of a challenge. So last weekend when I was craving a muffin with my coffee, I did the logical thing and made one in the microwave. Here you have it folks, Blueberry Mug Muffins! They are supper easy to make and takes less than 10 minutes to assemble and “bake.” The best part? When I was craving dessert last night I used the same recipe but substituted blueberries for Enjoy Life chocolate chips. It was life changing, you have to try it!
Blueberry Mug Muffins
Ingredients:
- 2 tbsp coconut flour
- 1/2 banana, mashed
- 1 tbsp apple sauce
- 1 egg
- ½ tbsp maple syrup or honey
- 1 tsp vanilla
- ½ tsp baking powder
- dash of salt
- a handful of blueberries (or your other favorite kind of berry)
Directions:
* Note that the ingredients above make one serving, multiply the ingredients by the number of guests and make each serving in a separate mug
- Combine all of the ingredients (except for the blueberries) in a mug and mix well.
- Fold in the blueberries.
- Place the mug in the microwave and cook for 2 minutes.
- Remove from microwave with an oven mitt and let sit to cool.
- Serve and enjoy!
