The month of December is always busy. Shopping for the holidays, wrapping things up at the office, and everything in between. That means we are busting out the slow cooker to make delicious home cooked meals with nearly no effort.
Since we use the slow cooker a LOT, we rely on our Ninja Cooking System. I’ve used a number of slow cookers over the years, but this one is pretty unique and lets you do a lot of different kitchen tasks in one! If you’re a slow cooking aficionado, you know how annoying it can be to use a separate pan to sauté garlic or other veggies in oil before throwing them in to whatever you’re making…the Ninja has a setting that lets you do it right in the pot! There is also a setting that lets you bake things using steam. Pretty high-tech huh?
Last night we decided to keep it simple with a quick recipe that uses a few ingredients we had in the house. This slow cooker salsa chicken is an easy meal that is full of flavor and happens to be one of our go-to meals during the week!

- 1 pound of chicken
- 1 (8-ounce) can diced tomatoes and chiles
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
- 1 teaspoon chili powder
- ½ teaspoon sea salt
- ½ teaspoon freshly ground pepper
- Combine all ingredients in a slow cooker
- Turn the slow cooker on and cook for 3-4 hours on high or about 6-8 hours on low
- When chicken is thoroughly cooked, use two forks to pull apart
- Serve of cauliflower rice or on a gluten free roll!
