With the first day of Fall right around the corner, I’m looking forward to the hearty and delicious comfort foods that come with the change of seasons. This paleo Chicken Chili may not look too appetizing, but it is one of the meals I am most looking forward too! Since J and I are currently stove less (long story), we decided to think of some meals that we could easily recreate without using the stove. While we usually make this chili recipe on the stove in a large pan, we decided to use the crockpot instead! The chicken was moist and the chili was full of flavor- it was definitely a win in our book!
What are your favorite “stove less” meals to prepare?
Chicken Chili
- 3-4 cooked chicken breasts, shredded
- 8 oz. can tomato sauce
- 14.5oz can diced tomatoes
- 4oz can diced green chili peppers
- 1/2 cup chicken stock
- 1 1/2 tsp garlic powder
- 1 tbsp chili powder
- 2 tsp basil
- 1 tsp oregano
- 2 tsp cumin
- Dash of chipotle chili powder or cayenne pepper
Instructions:
- Combine all ingredients in a pan and simmer for 30 minutes. Stirring continuously.
- Alternatively, you can combine all ingredients in a slow cooker (using uncooked chicken) and cook on low for 6-8 hours.
