Wednesday, January 16 – Day 14
Day 14 brought with it some challenges. As you probably know if you’ve been following along– or if you work full time, balancing work and planning for meals can be quite a challenge. To combat this battle, J and I often plan out our meals for the week and do the grocery shopping on the weekends. We plan five or six meals and then each night pick a different meal to cook. While this tends to work relatively well– minus the forgotten ingredient here or there– sometimes it’s even less about planning and more about the time it takes to cook.
Sometimes there are days that you don’t get out of work till almost seven o’clock and coming home to cook a meal that won’t be ready till almost eight seems imaginable. I’m sure you know the feeling. In the past when an unexpected late night popped up, J and I would either head out to restaurant practically under our apartment or we would order in. Unfortunately, this becomes a bit trickier on Whole30.
The night of day 14, was one of these “late nights” and though J and I were exhausted by the time we got home, eating out/ordering in was not an option. We had planned to make lemon pesto chicken with zucchini and we were going to make lemon pesto chicken with zucchini. I was really proud of our determination to “stick to the plan,” even if we didn’t sit down to dinner until after eight.
What are some tricks and tips you have for balancing work and meal planning? Do you tend to “stick to the plan” once you’ve made one or do you often “jump ship” when a meal doesn’t work out as planned?

Breakfast- Coffee with almond milk and two Easy Eggs
Lunch- Sweet potato latkes and a burger
Snack- Handful of dried cranberries, bananas, almonds and cashews
Dinner- Lemon pesto chicken, zucchini and sweet potato fries
