In a continued effort to continue to limit my sugar intake, I’ve been making my way through my copy of I Quit Sugar to find exciting new recipes to jazz up my weekly meals and snacks.
I have not been disappointed yet, in fact Sarah’s “caramelized” coconut chips have become a recent favorite and a staple mid-day treat at the office. The recipe requires only three ingredients (all of which you probably already have on hand) and only five minutes.

"Caramelized" Coconut Chips

Ingredients
- 1 cup unsweetened coconut chips (the big chunky ones)
- 1/4 tsp sea salt
- pinch of ground cinnamon
Instructions
- Toast the flakes on a non-stick frying pan over medium-high heat for 2-3 minutes, until they are a nice toasty color. Stir frequently so they don't burn. Transfer to a bowl and toss with the salt and cinnamon. Allow to cool, then store in an airtight container.
