Let’s face it, eating Paleo at the office can be difficult and once you have it down it get boring quickly.
I like to bring in left overs from the night before in order to save some money and ensure that I always have a healthy, Paleo friendly meal ready each afternoon. While there are some meals that I can’t wait to reheat, there are also times that dinner take-two sounds less than appealing.
Luckily I have a few standbys that I go to when I want to switch things up and have a little fun with lunch. These bite size tuna salad sandwiches are just the ticket. Easy to prep and fun to eat, these open face sandwiches remind me of the Lunchables I used to take on school trips as a kid.
Crisp plantain chips provide a delicious, salty base that can easily be topped with your favorite tuna or chicken salad! Pack them separate and then assemble when you are ready to eat!
- 1 (6 ounce) can tuna, drained
- ¼ cup chopped celery
- ¼ cup Paleo mayonnaise
- ½ teaspoon lemon juice
- Freshly ground black pepper
- Sea salt
- Plantain chips
- In a large bowl, combine the tuna, celery, mayonnaise, lemon juice, pepper and salt
- Mix well and refrigerate until chilled
- Serve with plantain chips
