While it may be difficult to enjoy a paleo friendly ice pop from the ice cream truck, that doesn’t mean you have to miss out of this summertime favorite. Whip up a batch of paleo friendly ice pops, like this recipe for pink lemonade ice pops, below, and surprise the kids after their first day of school!

- 2 cups water
- Juice from 2 lemons
- 2 tablespoons coconut nectar
- 4 strawberries
- Add all ingredients to the jug of your blender. Blend on high until smooth.
- Divide mixture between the ice pop molds. Cover with ice pop tops and transfer to the freezer to chill for 8 hours.
