I like crispy fries that are perfectly crunchy on the outside and tender on the inside. You know, the way they serve them at restaurants after they’ve been thoroughly deep fried. So how can you get that signature restaurant crunch at home without a deep fryer and all of the vegetable oil?
The answer is so simple that once I found it, I couldn’t believe I didn’t realize it sooner. Bake your fries (or pizza crust) on a wire rack! All you need to do if find a cooling rack that fits inside of your baking tray. I lay a piece of parchment paper in between and voila, you’re ready to go! Just oil and season as you normally would.
Using a wire rack in this way achieves extra crispiness because the fries are not sitting in oil and are cooking evenly on all side! Whether you are making sweet potato fries, beet sticks or parsnip crisps, this method will achieve perfectly cooked and crispy veggies every time — like magic!
