I spent most of this past weekend snuggled on the couch watching movies under a pile of blankets with the boys. It was a dreary weekend of rain and wet snow that kept us holed up in the house trying to keep warm with slow cooker stews and steaming lattes from our new Nespresso VertuoLine machine.
I also took this weekend as an opportunity to try my hand at a few new recipes for the upcoming holidays. One of these recipes was a batch of extra special double chocolate chip cookies. Made with nut butter and extra cacao, these crispy cookies are my new favorite dessert. I can’t wait to top one with scoop of banana nut ice cream.
Paleo Double Chocolate Cookies

Ingredients
- 1 cup almond meal
- ¼ tsp sea salt
- ⅛ tsp baking soda
- 3 tbsp melted coconut oil
- 2 tbsp honey
- 2 tbsp nut butter
- 1 tbsp cacao powder
- 1 tsp vanilla
- 1 tbsp almond milk
- 1 handful (or more) Enjoy Life chocolate chips
Instructions
- Preheat oven to 350 degrees
- In a blender combine the coconut oil, honey, nut butter, vanilla extract and almond milk
- Add the almond meal, cacao powder, salt and baking soda and mix until combined
- Stir in the Enjoy Life chocolate chips by hand
- Place tablespoon of dough onto lined cookie sheet, flatten with a spoon
- Bake for 10-11 minutes, until golden brown
- Remove from oven and let cool
