Something I learned quickly when I began my Paleo lifestyle is that eating meat for dinner every night can get old– fast. That is why J and I have experimented with just about every kind of spice rub, herb marinade and Paleo friendly sauce we can find.
One of my favorite sauces to make is Paleo Spinach Pesto. It goes great on chicken and makes an excellent alternative to marinara on top of zucchini spaghetti! Plus, with our handy Ninja Master Prep Pro, it is easy to make in just minutes and clean up is a breeze! Do I sound like an infomercial to anybody else? I don’t even care, this Ninja has been one of the best kitchen purchases we’ve ever made! It is perfect for blending smoothies in the morning and processing pesto at night!
Paleo Spinach Pesto (nut free)
Ingredients:
- 2 c fresh spinach
- 1 c fresh basil
- 2 tsp garlic, minced
- 4 tbsp olive oil
- 1 lemon
- Salt to taste
- Peper to taste
Directions:
1. Combine spinach, basil, garlic, salt and pepper in a food processor.
2. Add one light squeeze of lemon juice.
3. Turn food processor on and add olive oil (1 tbsp at a time) while processing.
4. Pulse until blended thoroughly.
5. Taste test– the yummy part!
6. Add more olive oil (1 tbsp at a time) and basil as needed.
