Spring is finally here and that not only means brightening up you closet with spring hues, but also your plate! Picking out seasonal fruits and vegetables at the market will allow you the best flavor and value this spring. So get out you farmer’s market tote and enjoy the lovely weather this weekend by stocking up on you favorite spring eats.
Apricots – Often thought of as a summer fruit, apricots actually come into season towards the end of spring with a peak season of from May to August. Look for plump apricots that feel heavy for their size and avoid those with any green. These fresh fruits should be stored at room temperature and out of direct sunlight. As with many fresh fruit, you will know a good apricot by it’s smell.
Artichokes – The main harvest for artichokes takes place in the spring (March through June). Although artichokes can look a bit intimidating, they can be quite delicious when prepared correctly. Look for artichokes with tight, compact leaves and fresh-cut stem ends.
Asparagus – Although we tend to eat asparagus year round, harvest takes place from March through June. For the best flavor, buy asparagus soon after it is harvested and look for smooth skin, bright green color, compact heads, and freshly cut ends. When storing asparagus, it is best to keep them standing in a glass (or vase) of water (or ice). Most importantly, remember the sooner you eat them, the yummier they are.
Beets – Beets are often thought of as a fall vegetable and they are available for much of the year, but the best beets come in the spring. Spring beets are more tender than those harvested later in the year. This spring look for fresh beets with their greens still attached.
Berries – Berries are one of my absolute favorite fruits in spring. They are versatile and extremely high in antioxidants. When shopping for berries use your nose – look for berries that smell like berries! Strawberries, for example, should have a rich perfume that tells you they are ripe and will taste like sweet.
