One of J and mine’s favorite go-to foods, whether we are cooking at home or grabbing a bite out, is an American classic – the cheeseburger. I’ve never met anyone who doesn’t like a good cheeseburger, and J loves them so much he used to order them at the diner for breakfast when he was a kid.
If you are eating clean or eating Paleo, hamburgers (sans cheese) are allowed and might bring some you some memories of a “normal” cheeseburger. Over the past year or so, though, we have gotten a little tired of the ordinary beef and turkey burgers we’ve been making. When I picked up my copy of Paleo Indulgences by Tammy Credicott, I was excited to try something new – these rosemary, spinach, and pork burgers, which were easy to make and absolutely delicious!
Spinach and Pork Burgers
Ingredients:
- 1 lb ground pork
- 1/2 tsp fresh rosemary, chopped
- 1/2 tsp fresh thyme, chopped
- Freshly ground salt and pepper, to taste
- 1/4 cup yellow onion, diced very small
- 1 tsp Dijon mustard
- 1/2 cup chopped fresh spinach
Directions:
- Place all the ingredients into a medium bowl and mix to combine.
- Form into 4 patties.
- Grill the patties or cook in a greased cast-iron skillet over medium heat until browned and cooked through, about 5 minutes per side.
- Top with your favorite garnishes: lettuce, tomatoes, avocado, grilled onions, pickles, kraut!
