I love chocolate, so anytime I can incorporate a little bit of chocolate into a recipe, I’m a happy cave girl. While this snack is almost as easy to make as my four step Halloween DIY, I couldn’t help but share it with you.
I came up with this recipe a few weeks ago when I was craving a bit of chocolate. Instead of picking up chocolate covered almonds at Trader Joes, I decided to make my own. I mean chocolate covered almonds can’t be that difficult to make, can they?
The best part about this recipe, besides it being pretty simple. Is that you can take out the sea salt and sub in any other flavoring. Or you can get really fancy and add in fruit or berries. How would you customize your chocolate covered almonds?
- 2 cups of almonds
- 2 bars of dark chocolate
- A pinch of sea salt
- Create a double broiler using a medium bowl and a sauce pan
- Line two baking sheets with parchment paper; set aside.
- Break the dark chocolate into smaller pieces and add to the bowl
- Stir until melted
- Add a pinch of sea salt and continue stirring
- In a large bowl, combine almonds and melted chocolate; stir until well coated.
- Transfer the coated almonds to prepared baking sheets.
- Place in the refrigerator for 30 minutes.
- Store in an airtight container in the fridge
