I am usually a bacon and eggs kind of girl, but every so often I get a craving for something sweet for breakfast. Paleo pancakes are a bit too time consuming during the week, so I created a quick and easy paleo mug cake inspired by my favorite kind of pancake – chocolate chip!
Sweetened with a maple syrup, this vanilla cake tastes like Sunday morning pancakes, but they are way easier to eat in bed! Sprinkle in chocolate chips like I did, or swap in a handful of berries! I promise, you won’t be disappointed.
Chocolate Chip Mug Cake

Ingredients
- 1 egg
- 2 tbsp maple syrup
- 1 tbsp vanilla extract
- 1 tbsp coconut flour
- 1 tbsp almond flour
- 1 tbsp Enjoy Life chocolate chips
Instructions
- Combine all of the wet ingredients in a mug and mix well
- Mix in the dry ingredients
- Place the mug in the microwave and cook for 1 to 2 minutes, or until cooked through
- Remove from microwave with an oven mitt and let sit to cool
