Remember back when you were younger and the best sound in the summer was the song that the ice cream man played? I used to ride bikes with the neighborhood kids and as soon as we heard the ice cream truck we darted home for a dollar – remember when ice cream was only a dollar?
These berry cream pops may require a little more work than lining up in front of the ice cream truck, but I promise they are just as refreshing as a Screwball or Strawberry Shortcake on a hot summer day. Plus they are awfully pretty, just be sure to enjoy all the goodness before it melts!
Paleo Berry Cream Pops

Ingredients
- 1 (14 ounce) can of coconut cream or full fat coconut milk, room temperature
- 1/4 cup raw honey
- 1/2 cup fresh strawberries, diced
- 1/4 cup dried blueberries
- 2 tablespoons raw honey
Instructions
- Combine coconut cream, 1/4 cup honey and 1/2 cup strawberries in a blender until well combined
- Pour mixture into popsicle molds or dixie cups
- Place in the freezer for 30 minutes to harden
- Mix together dried blueberries and 2 tablespoons honey in a small bowl
- Once the popsicles begin to harden, top with the dried blueberries
- Press a craft stick into the middle.
- Place in the freezer for an hour minutes to harden
