I love a good chocolate chip cookie but sometime you want something a little more special, perhaps a little more decadent than your average cookie. That’s where these crunchy little treats come in!
Filled with fruit and nuts, these cookies are prefect for the holiday season. Not to mention the nutty, crumbly consistency is perfect with a glass of milk — hello Santa! I promise you’re non paleo friends and family won’t even realize that it’s a paleo recipe!
So get out your baking sheets and roll up your sleeves because everyone is going to want this recipe at the holiday cookie swap!
- 3 cup almond flour
- ½ cup coconut sugar
- 1 tsp baking soda
- 1 tsp salt
- 2 eggs
- ½ cup coconut oil, melted
- 1 tsp vanilla extract
- 1 cup slivered almonds
- 1 cup chopped walnuts
- ½ cup cranberries
- ½ cup dark chocolate chips
- Preheat the oven to 375 degrees
- In a large bowl combine the almond flour, coconut sugar, baking soda and salt
- In a small bowl whisk together the eggs, coconut oil and vanilla extract
- Combine the wet and dry ingredients well and
- Fold in the almonds, walnuts, cranberries and dark chocolate chips
- Spoon dough onto a lined cookie sheet
- Bake for 10-15 minutes or until golden brown
