Do you ever get an idea or do something for the first time and wonder why you hadn’t thought of it before? It happens to me all the time! Sometimes it’s a recipe, like the time I first turned my beloved chicken tender recipe into chicken nuggets by cutting them into smaller pieces, and sometimes it’s an outfit that I put together. Other times someone else comes up with an idea and you kick yourself for not thinking of it.
Well a few weeks ago I heard about the pull apart potato. While I’d heard about pull apart bread before, the concept of the pull apart potato was a new one. Basically people were slicing a white potato into think slices, covering it in with cheese and bacon and roasting it in the oven until crisp.Instead of kicking myself for not thinking of the idea sooner, I started to think about how I could improve it. Then the light bulb went off- make it healthier! That’s when I came up with the ultimate sweet potato.
Using the same concept as the pull apart potato, I scored and sliced a sweet potato and then added a drizzle of olive oil, salt and pepper to the top. To take it over the edge you can also add some nutmeg and cinnamon, or a drizzle of pure maple syrup.
This recipe is simple, but leave yourself some time to roast the potato until it is cooked all the way through!
- A sweet potato
- Olive oil
- Salt
- Pepper
- Other toppings (i.e., nutmeg, cinnamon, maple syrup, etc)
- Preheat the oven to 450 degrees
- Line a baking sheet with tin foil
- Score the potato evenly along the spine and slice almost completely through
- Drizzle olive oil over the back of the potato
- Sprinkle with salt and pepper
- Bake for 40-50 minutes or until thoroughly cooked and slightly crispy
