Breakfast is by far, my favorite meal of the day – unless you count dessert as a meal, then I pick dessert – and I am saddened that it is so often overlooked. I too am guilty of picking up an almond milk latte on my way into the office and forgoing and becoming so inundated with e-mails that breaking for a banana or grain-less granola seems impossible.
Alas, I am here to change all that! I am on a mission to find the best simple paleo breakfasts to help you start the day off in a positive way. No more being tempted by those mouth watering pastries when you order your latte because you will have already packed a delicious and healthy breakfast.
The first stop on the simple and easy paleo breakfast train (can you imagine if such a train existed?!) is the ultimate breakfast food, the Flapjack, commonly referred to as the pancake. I took things one step further and make it into a donut. After all, a donut is mush easier to take on the go and eat with your hands.
But the best part of the paleo flapjack donut is that you can customize it just like you would your favorite pancake at IHOP! I used a handheld mixer to whip together grass-fed butter and maple syrup for a classic flapjack (above) but feel free to get creative! Next on my list are flapjack donuts topped with whipped coconut cream and berries, nut butter and chocolate drizzle or a simple sliced banana.
- 3 eggs
- 1/2 cup almond milk (carton, unsweetened)
- 1 ripe banana
- 2 tbsp butter, softened
- 1 tsp vanilla extract
- 1/2 cup coconut flour
- 2 tbsp cup almond flour
- 1/2 tsp baking powder
- pinch of salt
- Preheat a doughnut maker*
- Use a hand mixer to whisk eggs until they become foamy and fluffy
- Add almond milk, banana, butter, coconut flour, almond flour, cinnamon, baking powder, vanilla and salt
- Mix again until well combined
- Scoop the batter into a large ziploc bag, seal the top and snip one of the bottom corners
- Pipe the batter into the doughnut maker, filling it all the way
- Cook until the doughnut machine indicator light goes off, or about 5 minutes (note that depending on your machine you make need to flip the donuts and cook for an additional 2 minutes)
- Repeat steps 8 and 9 until all of the batter is used
- Remove the doughnuts and let cool on a wire rack
- Trim and edges of the donut, if needed
- *If you don’t have a donut maker you can also make this recipe in a donut pan. Bake at 350 degrees for 15 minutes or until golden brown.
