Inspired by the classic peanut butter cookie (crosshatch pattern and all), I created a flour-less, paleo version with a great taste and texture! I used sun butter and coconut sugar in the recipe but you can easily substitute in your favorite nut butter and sweetener to make your perfect cookie!

Ingredients
- 1 cup sunbutter (or your favorite nut butter)
- 1 cup coconut sugar (or 1/2 cup of molasses)
- 1 tsp vanilla extract
- 1 large egg, lightly beaten
- Coarse sea salt
Instructions
- Preheat the oven to 350 degrees
- In a medium bowl, combine the sunbutter, coconut sugar, vanilla and egg until well combined
- Spoon 1 tbsp of the dough about 1 inch apart onto parchment lined baking sheets
- Flatten the mounds with the tines of a fork
- Sprinkle coarse salt on top of the cookies
- Bake about 10 minutes, until golden around the edges
