As I mentioned earlier this week, the past few months have been nothing short of a whirlwind around here. In addition to my big news from this post, I have been working on a super secret and exciting new project. It has been absolute torture trying to keep this one in, so today I am so happy to finally spill:
My sophomore cookbook Spiralize It! will officially be available in December 2015!
Yes, you read that right, my SECOND cookbook will be on shelf before the end of the year! And if you’re really slick you have probably already figured out that this book is chock full of recipes featuring fruit and vegetable noodles from a little appliance called a “spiralizer.” I can not even begin to explain how excited I am to share this cookbook with you all, so let me give you a little background and then dive into what Spiralize It! is all about!
Since going whole hog Paleo three years ago, I sure have learned a lot! I’ve learned how to make homemade mayonnaise and how to properly roast a chicken. But most importantly, I’ve learned that its not about labels — its about eating whole, clean foods that make you feel good.
Eating healthy does not need to be complicated. In fact, my food philosophy is pretty simple- eat less processed foods and more real foods that make you feel great.
It was during what I call my “kitchen education” period that I had first heard about vegetable noodles. At the time, spaghetti squash was having a big moment in the Paleo community, and I was told that other vegetables could also be a healthy and nutritious noodle replacement in my favorite pasta dishes. I purchased a combination julienne peeler/mandolin and started transforming zucchini into pasta and lasagna noodles right away!
Then came the spiralizer — and it was a complete game changer. Though almost silly to say, using a spiralizer is not only a great way to maintain a healthy diet, but you will actually have fun preparing your meals (provided you don’t slice a finger in half—hello, those blades are sharp)!

When cooking isn’t a chore, but rather something you enjoy doing, you stand a much greater chance of continuing to eat healthy. Spiralizers make it ridiculously easy to prepare and eat more vegetables. And even the newest home cook can’t help but feel proud when looking down at a colorful, beautiful pile of noodles, produced in seconds.
Using a spiralizer helps me enjoy cooking, which allows me continue to eat healthy. There’s something about a tangle of veggie noodles that’s not just good for you, it’s fun, too.
So what is Spiralize It! all about?
