I am so excited I can barely sit still! I have some very exciting news to share with you all next month and it is one of the hardest secrets I’ve ever had to keep. Unfortunately my lips are sealed for a few more weeks. So until then I thought I’d share a super easy recipe with you all. Don’t get me wrong, I love fancy recipes that look amazing and taste even better but with all of the secret recipe development going on in the house, my weeknight meals have been less about looks and more about convenience.
Tacos have always been a favorite week night dinner because they are easy to throw together and can be prepared and on the table in under a half hour. While I have always enjoyed tacos in lettuce wraps or open face over a pile of plantain chips, lately I’ve been having a love affair with cauliflower rice.
While you can get fancy adding shredded lettuce, salsa, guacamole and peppers, I also enjoy these taco bowls without all the extra fluff.

- 1 pound ground beef
- 2 teaspoons chili powder
- 1 teaspoon onion powder
- ¾ teaspoon garlic salt
- 1½ teaspoon paprika
- 1½ teaspoon cumin
- ½ teaspoon salt
- ½ cup water
- 1 head organic cauliflower
- 1 tablespoon oil
- 1 garlic clove
- Salt and pepper to taste
- Brown the ground beef over medium heat
- Add chili powder, onion powder, garlic salt, paprika, cumin, salt and water
- Stir and reduce heat
- Let simmer for 10-15 minutes before removing from heat
- Chop the cauliflower into small florets
- Pulse cauliflower in food processor (or grate with cheese grater)
- In a pan heat 1 tbsp oil and 1 garlic clove for 30 seconds
- Add cauliflower and mix for 2-3 minutes
- Add salt and pepper to taste
- Covered the pan and cook for 5-10 minutes, until softened
- Plate cauliflower rice and top with ground beef
