Every year I make a handmade gift for my co-workers. Two years ago I made emergency sewing kits for the ladies at the office, last year I stole J’s idea and made all-purpose spice rub and this year I decided to go with home made trail mix bark. Although I had been planning this particular gift for a while, it also makes for a great last minute gift idea because it uses ingredients every Paleo cook has in the pantry!
The base of this bark is dark chocolate chips that are melted and spread on a cookie sheet and then topped with a few of your favorite things. You can add any combination of nuts and dried fruit/berries that you have on hand. If you have friends that aren’t strict Paleo, crushed candy canes make an excellent topping as well.
The recipe itself is super easy but your friends and family will appreciate the thought you put into this tasty home made treat! What toppings would you add to your trail mix bark?
- 4 cups dark chocolate chips
- ⅓ cup sliced almonds
- ⅓ cup dried cranberries
- ⅓ cup golden raisins
- ⅓ cup unsweetened coconut flakes
- Sea salt
- Place half of the dark chocolate chips in a microwave bowl and cook for 5-6 minutes, stirring frequently, until melted
- Line two baking sheets with parchment paper
- Pour melted dark chocolate onto lined baking sheet and spread the chocolate into a rectangle (the chocolate can be as thick/thin as you want based on preference)
- Sprinkle almonds, dried cranberries, golden raisins, coconut flakes and sea salt on the chocolate
- Place the baking trays in the freezer until hard
- Break the chocolate into pieces and enjoy!
