No matter how much preparation you do, eating healthy while traveling is a challenge. Not only can eating out every meal be a strain on your wallet, but it is also tough on your stomach.
Call me crazy but when I am on vacation, the thing I miss most (besides Charlie of course) is my stove. Whenever possible I like to stay somewhere with a kitchenette so that I can prepare a few dishes for myself. Unfortunately that’s not the case this week, so I am enjoying all the yummy Cajun food New Orleans has to offer (poor me, right?).
Any who, I thought I’d share a quick and easy recipe that is simple enough to make while traveling and can be carried on the go in a mason jar. This recipe is also great for your next paleo party!
- 1 lb beef
- 1 jar of salsa
- 1 jar of paleo guacamole
- 1 can black olives
- 1/2 head iceberg lettuce
- 1 bag of plantain chips
- Your favorite taco seasoning (mine is below)
- 2 tsp. chili powder
- 1 tsp. onion powder
- 3/4 tsp. garlic salt
- 1 1/2 tsp. paprika
- 1 1/2 tsp. cumin
- 1/2 tsp. salt
- Dash of cayenne
- Cook the beef in a pan until brown (about 5-8 minutes)
- Add taco seasoning and 1/2 cup of water
- Let simmer for 5 minutes
- While beef is simmering, chop lettuce into small pieces
- Drain beef
- Layer beef, guacamole, salsa, lettuce and olives
- Serve and enjoy with plantain chips
- Let the kids help! This is the perfect opportunity to let them get creative and fill each layer!
