I distinctly remember driving to the local Dunkin Donuts after school on Thursdays for eclairs and making our way to the McDonalds’ dive-through in March for our annual Shamrock Shakes. My grandma sure did like to spoil us with sweets when we were little.
Whether it was nostalgia around Saint Patrick’s Day or a craving for something sweet, I couldn’t help but try my hand at a healthy paleo version of the coveted Shamrock Shake. Rather than following the usual route for a minty milk shake, this Shamrock Shake more closely a green smoothie with a hint of mint.
Try it out this weekend in celebration of Saint Patrick and let me know what you think! If you want something extra decadent, substitute the coconut milk for coconut ice cream.
- 1 banana, frozen
- ¼ teaspoon pure peppermint extract
- 1 cup coconut milk
- ¼ cup spinach
- 2 tablespoon of dark chocolate chips
- Place all of the ingredients in a blender in the order listed
- Blend for 30 to 60 seconds, or until smooth, and serve immediately
