For me, one of the most challenging things about switching to a paleo lifestyle was learning to bake. It took a while, and many burnt batches of cookies to learn what worked and what didn’t. I like to think I have a good handle on the oven now, but every so often I test out a new ingredient and feel like I am starting from scratch all over again.
That being said, the one thing every paleo pastry chef should have under their belt is a knowledge of natural sweeteners that can be used to add a little sweet to their treats!. When I bake, there are five main types of sweeteners that I use: agave nectar, organic maple syrup and raw honey. While these sweeteners may sound fancy, they are often pretty affordable and can be found at your local grocer (or target). The key is to find natural, organic sweeteners with no additives. Therefor the only ingredient in your organic maple syrup should be pure maple syrup!
