Last weekend was my birthday and the only thing I asked for was a day of holiday decorating and a big, Paleo friendly dinner. Luckily we did just that! J and I spent the day playing Christmas music, trimming our tree and getting ready for the holidays.
We worked up a bit appetite and then whipped up a three course Paleo meal. Complete with chocolate fudge cake and peppermint ice cream. It was the most perfect birthday made even better by dessert! The ice cream was so simple and delicious I had to share the recipe. The recipe uses three ingredients and doesn’t even require an ice cream maker.

- 1 (12-ounce) can coconut milk, chilled
- 2 tablespoons maple syrup
- ½ teaspoon peppermint extract
- Combine all ingredients in a blender and mix until smooth
- Pour mixture into a freezer safe bowl
- Place bowl in the freezer for 30 minutes
- Remove and whisk vigorously
- Repeat steps 3 and 4 three more times
- Let freeze overnight
