This weekend I had a craving for chocolate that I just couldn’t kick with a spoonful of Nikki’s Chocolate Hazelnut Brownie Coconut Butter. So I did the next logical thing and whipped up a batch of paleo brownies. Since I wanted instant gratification and didn’t want to go to the market, I used ingredients that I already had on hand to make this faux peanut butter brownies. They are easy to prep in a blender or by hand and bake in about 20 minutes!
Do you prefer a fudge-like brownie center? Simply follow the recipe below without adding the coconut and almond flower for the perfect ooey gooey consistency!
Paleo “Peanut Butter” Brownies

Ingredients
- 1 cup sun butter
- 1/3 cup maple syrup, room temperature
- 1 egg, room temperature
- 2 tbsp coconut oil, melted
- 1 tsp vanilla
- 1/3 cup cocoa powder
- 1/2 tsp baking soda
- 1 tbsp coconut flour
- 2 tbsp almond flour
Instructions
- Preheat the oven to 325 degrees
- In a blender combine the sun butter, maple syrup, egg, coconut oil and vanilla
- Add the cocoa powder, baking soda, coconut flour and almond flour and mix again until combined (about 30 seconds)
- Scrape down the sides of the bowl if needed in order to incorporate all of the flour and pulse once or twice more
- Pour the batter into a lightly greased a 9-inch baking pan
- Bake for 20 minutes or until a toothpick comes out clean
- Remove from oven and let cool for 5 minutes (or sneak a taste right away like I usually do)
- Serve with a tall glass of almond milk or your favorite coconut ice cream
Notes
- Stir in a handful Enjoy Life chocolate chips or your favorite nuts to give these brownies a little something extra!
