My grandmother and I used to spend the days before Christmas baking just about ever cookie you can imagine. We made all of the traditional holiday cookies, like sugar cookies cut out in shapes or Santa, snowmen and stockings. And we also made some not so traditional treats, like peanut butter balls and crackers dipped in chocolate!
My favorite were peanut butter thumbprints, hands down. You know the ones I’m talking about, a big fluffy peanut butter cookies it a Hershey kiss placed right on top! Delicious, right? It was my job to place the kisses just right– and I took that job very seriously.
As the years have pass by, I don’t get to see my grandma as much as I’d like to, but we always make time to do a little Christmas cookie baking. In fact, we came up with this Paleo friendly version of my childhood favorite. I, of course, am still in charge of adding the chocolate kisses!
Nut Butter Thumbprints

Ingredients
- 1½ cups almond flour
- 2 tablespoons coconut flour
- 3 tbsp coconut sugar
- ½ tsp baking soda
- ¼ tsp sea salt
- ½ cup sunflower seed butter
- ¼ cup maple syrup
- 3 tbsp grass-fed butter, softened
- 1 tsp vanilla extract
- Dark chocolate chips
Instructions
- Preheat the oven to 350 degrees
- In a large bowl, combine almond flour, coconut flour, coconut sugar, baking soda and salt
- In a small bowl combine sunflower seed butter, maple syrup, butter and vanilla extract
- Slowly add wet ingredients to dry ingredients
- Mixing until well combined
- Roll dough into round balls and place on a lined baking sheet
- Gently press a large dark chocolate chip into the top of each with your thumb
- Bake for 10 minutes, or until edges are golden brown
