Nothing says summer quite like a barbecue on the Fourth. Am I right?
The best thing about summer barbecues is that it is extremely easy to stay on track with your paleo lifestyle. All you have to do is say no to the bun and pile up on the fruits and veggies.
Easier said then done, huh? That’s why I’ve prepared a fool-proof menu that won’t hack your paleo lifestyle and is sure to please non-paleo eaters as well.

Appetizers:
Keep appetizers light and fresh. My personal favorite is plantain chips (Trader Joe’s and Whole Foods have great options) served with homemade guacamole. A simple salad is another great option.
The Meal:
Bring on the burgers! Nothing says America quite like a perfectly grilled burger at a summer barbecue. This year spice things up with a play on the traditional beef patty. These apple bacon burgers, spinach and pork burgers and pot sticker burgers are sure to please even your pickiest of party guests.
Another great idea is to prep a few main dishes in advance to cut down on the amount of work at your summer barbecue. This herb braised short rib or tangy pineapple pulled pork are easy to prep and cook in the crockpot while you mingle with your guests (they also make a great guest dish if you are asked to bring something to the party).
Dessert:
When the sun is out, dessert should be simple and refreshing. So for the fourth, skip the cookies and instead opt for a big bowl of berries and coconut cream! Not only does this recipe require little prep, but it is also patriotic! Looking to jazz it up a bit? Pile the berries on wooden dowel (alternating the blue berries and strawberries) and serve with the coconut cream on the side.
Strawberry coconut ice cream is another delicious choice!
