Bananas have been my go-to when I reach for a sweet treat over the past few weeks. They pair perfectly with other fruit flavor flavors in smoothies and are even better when whipped together with nut-butter in my paleo banana-nut ice cream. Lo and behold, last week I found yet another way to cool off with a refreshing banana inspired treat! The banana pop is not a new concept, but I decided to give it a little overhaul so that it was Whole Life Challenge compliant.
The banana pop is the perfect afternoon snack on a warm summer day and is easily enjoyed by the whole family! The best part is you can easily add your favorite toppings to the mix. Are you a carob dip, almond covered or coconut cluster kind of person?
- 4 medium bananas
- 1/2 cup carob chips
- 2 tbsp coconut oil
- 1 tbsp grass-fed butter
- 1/4 finely chopped peanuts, shredded coconut or other topping
- 16 craft sticks
- Line a baking sheet with wax paper
- Peel and cut each banana into fourths
- Insert a craft stick into each banana and place on a baking sheet
- Place in the freezer until frozen, about 3-4 hours
- Place the toppings in a shallow dish/plate
- Melt the carob chips, coconut oil and grass-fed butter in a double broiler or in a microwave safe bowl, stirring frequently until smooth
- Pour the melted carob mixture into a bowl
- Dip each frozen banana into the chocolate, turning to coat it
- Immediately roll the carob covered banana in the toppings
- Place on a baking sheet with wax paper
- Serve immediately or wrap individually in waxed paper and freeze
