This weekend we took a trip to Ikea to pick up a few last minute necessities for the apartment. Because we knew exactly what we were looking for (a nightstand and a rug) we passed the showroom and headed straight for the marketplace hoping to limit temptation.
Well you put me in the kitchen section and all of a sudden I find two baking tins, three cooking utensils and five kitchen accessories that I can’t leave with out. So we ended up leaving with an end table, full cart and no rug.
When we got home I could wait to try out my new mini muffin pan. J requested chocolate chip muffins so naturally I decided to turn things up a notch with DOUBLE chocolate chip muffins. Go big or go home right?
- 2 cup almond flour
- 4 tbsp coconut flour
- ¼ tsp salt
- ½ tsp baking soda
- 4 tbsp cacao powder
- 2 bananas (mashed)
- 4 eggs
- 4 tbsp pure maple syrup
- 2 tsp organic vanilla extract
- ¼ cup Enjoy Life chocolate chips
- Preheat oven to 350 degrees
- Line muffin tray with liners or grease well with coconut oil
- Combine all wet ingredients, mix well
- Stir in dry ingredients, until well combined
- Pour batter into muffin tray
- Bake for 15 minutes, or until toothpick comes out clean
