They say when life gives you lemons, make lemonade. Well I didn’t get any lemons for Christmas, but I did get a donut maker. So I think I’m going to revise that statement to be when your boyfriend gifts you a donut maker, make donuts… lots of them.
About a month ago I was perusing my cookbooks, blogroll and instagram looking for some recipe inspiration when I ended up lusting after all of the pretty paleo donuts I saw (I mean how yummy does BaconItPaleo’s Samoa Donuts look?). That’s when I blurted out how much I would love a donut maker. Low and behold guess what was waiting for me under the tree this Christmas?
So in an effort to get my feet wet, my first (of what is sure to be many) attempt at a paleo donut was fairly straight forward, a dark chocolate glazed donut. Not only are they pretty to look at but they taste delicious!
What’s your favorite donut recipe?
- 4 eggs
- 1/4 cup grassfed butter, melted
- 1/4 cup coconut milk, warm
- 1/4 cup raw honey
- 1 tsp apple cider vinegar
- 1 tsp pure vanilla extract
- 1/2 cup coconut flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup dark chocolate
- 1 tsp coconut oil
- 1 tsp raw honey
- Preheat a doughnut maker*
- Mix together the eggs and butter in a large bowl until creamy
- Add the milk, honey, vinegar, and vanilla and mix again until well combined
- Slowly add the remaining dry ingredients into the bowl and mix well
- Scoop the batter into a large ziploc bag, seal the top and snip one of the bottom corners
- Pipe the batter into the doughnut maker, filling it all the way
- Cook until the doughnut machine indicator light goes off, or about 5 minutes
- Repeat steps 6 and 7 until all of the batter is used
- Remove the doughnuts and let cool on a wire rack
- Trim and edges of the donut, if needed
- Melt together the dark chocolate, coconut oil and honey in a double broiler or in a microwave safe bowl
- Mix well and then let sit until the glaze is slightly thicker
- Dip each doughnut in the glaze, twisting it as you lift it out to rid of any excess glaze
- Place on a wire rack to cool
- Serve and enjoy
- *If you don’t have a donut maker you can also make this recipe in a donut pan. Bake at 350 degrees for 15 minutes or until golden brown.
