One of my favorite things about having paleo friends is when they introduce me to new paleo recipes, especially dessert recipes! So you can imagine how excited I was when our friend Jess surprised us with a batch of Chocolate Chip Bars. Not quite a cookie or muffin, these ooey gooey bars remind me almost of a brownie and are filled with chocolate chips sure to satisfy your sweet tooth!

Paleo Chocolate Chip Bars

Ingredients
- 1 tsp Baking Soda
- 1 tsp Salt
- 2-3 tbsp coconut sugar
- 3 cups almond flour
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup coconut oil
- 1/2 cup maple syrup
- 2-3 tbsp organic molasses
- 1 1/2 cup Enjoy Life chocolate chips
Instructions
- Preheat oven to 375 degrees
- Lightly coat a baking dish with coconut oil
- In a medium-sized mixing bowl combine dry ingredients
- In a small mixing bowl beat eggs, maple syrup and vanilla extract with a hand mixer
- Combine wet and dry and beat with hand mixer until well combined
- Melt coconut oil, pour into batter, and continue to blend until combined
- Stir in Enjoy Life chocolate chips
- Spread batter into the baking dish
- Bake for 8 minutes, rotate and bake for 8 more minutes (or until golden brown)
