If you followed along via instagram or read the recap, you know that the food in New Orleans was delicious! Let me tell you, the chefs are doing something right in New Orleans. The beef was always grilled perfectly. We found fun, unique appetizers on every menu. And dessert? Let’s just say I fell victim to a beignet or two – don’t go calling the paleo police, I’m back on the wagon now.
After a week of the best food I’ve ever eaten, I was a bit nervous that J and I would get bored of our regular, home cooked meals quickly. So we stocked up on spices from a few of my favorite little shops in the French Quarter.
Last night we tried out hand at our first Cajun inspired dish and made a blackened chicken using Cookin’ Cajun Blackening Seasoning from Creole Delicacies! It was delicious and went well with garlic roasted asparagus.
- 1 1/2 lbs chicken breast
- 3 Tbsp Kerrygold butter
- Cookin' Cajun Blackening Seasoning from Creole Delicacies, to taste
- Wash and prep the chicken
- Pour a generous amount of the seasoning onto a plate (about 2-3 Tbsp)
- Heat a large skillet over high heat
- Melt butter in the microwave or on the stove
- Dip each piece of chicken in the melted butter and transfer to the seasoning plate
- Coat the chicken thoroughly and rub the seasoning into the meat
- Carefully place each piece of chicken into the pan
- Sear the chicken on each side until blackened, ensuring the meat is fully cooked
- Serve over a hearty vegetable
- If you have an exhaust fan over your stove, you should definitely turn it on. The seasonings on the hot pan can create a lot of smoke!
