One of my favorite foods when I was visiting New Zealand had to be sweet potato fries and aioli. I know, I know not the most unique or country specific food, but it was a yummy treat that we would stop for after class or during one of our many road trips around the country. Let me tell you I met a lot of people and heard a lot of stories over a plate of these fries and a cold beer. So when tasked with making a party snack for paleo and non paleo eaters for a friends party, I thought I might try and whip up a homemade paleo aioli to accompany some sweet potato fries!
Not only was the recipe a success, but everyone was obsessed with the aioli! Once we devoured the sweet potato fries, we started dipping carrot sticks, chicken wings and anything else we could find in this savory sauce.

- 2/4 cup paleo mayonnaise
- 3 cloves of garlic, minced
- 2 1/2 tbsp lemon juice
- 3/4 tsp salt
- 1/2 tsp ground black pepper
- Combine all ingredients in a bowl
- Cover and refrigerate for at least 30 minutes
- Serve with sweet potato fries and enjoy!
