Apple-Cinnamon Overnight Oats

Do you dread the sound of the alarm clock? Or have a morning routine so complex you only have time for a cup of coffee on your way out the door? These overnight oats make breakfast possible. They’re easy to put together before bed so you wake up to a hearty, nutritious breakfast you can also take with you. All you need is a large (1-pint) mason jar—a clean pasta sauce jar works, too. Bonus points for the hearty oats and chia seeds loaded with antioxidants, fiber, and protein that help keep you full all morning. Save time by making a batch of overnight oats in advance. It will keep in the refrigerator for 2 to 3 days.
Ingredients
  • 2 cups rolled oats (gluten-free if desired)
  • 2 cups whole milk or almond milk
  • 2 tablespoons chia seeds
  • 2 tablespoons pure maple syrup
  • 2 teaspoons ground cinnamon, plus
  • additional as needed
  • ¼ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 apples, spiralized into spaghetti noodles
  • 4 tablespoons chopped almonds, divided
Instructions
  1. In a large bowl, stir together the oats, milk, chia seeds, maple syrup, cinnamon, sea salt, and vanilla.
  2. Evenly divide the apple noodles among (1-pint) mason jars. Top each with equal amounts of the oat mixture.
  3. Garnish each with 1 tablespoon of almonds and additional cinnamon, if desired.
Notes
Prefer your oatmeal warm? Prepare your oats in a microwave-safe jar, and pop them in the microwave for 20 to 30 seconds on high when you are ready to eat.
