This one pan recipe is a delicious combination of bold flavors and a quick and delicious alternative to the traditional eggs and bacon breakfast. Don't have spinach on hand? Substitute another leafy green. You can also add diced tomatoes, pine nuts or other mix-ins!
Ingredients
4 slices of bacon, diced
1 cup spinach
4 large eggs
1 tsp parsley
½ tsp onion powder
salt
pepper
Instructions
Heat a large skillet over medium heat
When the skillet is hot, add the bacon and cook until crispy
Remove the bacon from the skillet and set aside
Drain ¾ of the bacon fat from the skillet and add the spinach
Whisk the eggs, parsley and onion powder
Once the spinach begins to cook through, add the egg mixture
Stir continuously until eggs are thoroughly cooked
Add the bacon into the scramble
