Crispy Sweet Potato Fries

Fries are always best when they crunch! These Crispy Sweet Potato Fries will bring out your inner child because they are as fun to eat as they are delicious!
Ingredients
  • 2 large sweet potatoes
  • 2 tablespoons of olive oil
  • Sea salt
Instructions
  1. Preheat oven to 400 degrees
  2. Wash the sweet potatoes and slice the ends of each sweet potato
  3. Place the sweet potato in the spiral vegetable slicer, using the smallest or medium blade
  4. Slowly crank the spiral vegetable slicer handle so that it produces small shoestring pieces of sweet potato
  5. Discard the small core of the sweet potato
  6. Toss potatoes in a large plastic bag with olive oil and a dash of sea salt
  7. Lay a wire cooling rack on top of a baking tray
  8. Place a layer of cut sweet potatoes on the wire rack
  9. Bake for 20-25 minutes
