Paleo Pancakes with Roasted Blood Oranges

Ingredients
  • ¾ cup almond flour
  • ½ cup tapioca flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon sea salt
  • 2 eggs
  • ½ cup coconut milk
  • ½ cup grass-fed butter, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon apple cider vinegar
  • Roasted blood oranges
Instructions
  1. In a large bowl combine the almond flour, tapioca flour, baking powder, cinnamon and sea salt.
  2. Add the eggs, coconut milk, butter, maple syrup and apple cider vinegar, mix well.
  3. Heat ½ tablespoon of butter in a skillet over medium, until hot
  4. Pour the batter into the skillet and let cook for 2-3 minutes or until the batter starts to bubble
  5. Flip the pancake and cook the other side for 2-3 minutes or until golden brown
  6. Repeat steps 4 and 5 with remaining batter
