Paleo Peppermint Ice Cream

Ingredients
  • 1 (12-ounce) can coconut milk, chilled
  • 2 tablespoons maple syrup
  • ½ teaspoon peppermint extract
Instructions
  1. Combine all ingredients in a blender and mix until smooth
  2. Pour mixture into a freezer safe bowl
  3. Place bowl in the freezer for 30 minutes
  4. Remove and whisk vigorously
  5. Repeat steps 3 and 4 three more times
  6. Let freeze overnight
