Paleo Baked Apple Crisp

Ingredients
  • 4 large apples, sliced thinly
  • 1¼ cup almond meal
  • ¼ cup slivered almond
  • ¼ cup chopped walnuts
  • ⅓ cup unsweetened shredded coconut
  • 2 tbsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp sea salt
  • 2 tbsp coconut sugar
  • 4 tbsp pure maple syrup
  • 5 tbsp coconut oil, melted
  • juice of 1 lemon
Instructions
  1. Preheat oven to 300 degrees
  2. Lightly grease a glass pie dish with coconut oil
  3. Layer the thinly sliced apples in the pie dish
  4. Squeeze the lemon juice over the apples avoiding any seeds
  5. Combine the almond meal, almonds, walnuts, coconut, cinnamon, nutmeg and salt in a medium bowl
  6. Combine the melted coconut oil and the maple syrup in a separate bowl
  7. Add the wet ingredients to the dry ingredients, mixing thoroughly
  8. Spread the topping evenly over the apples and then lightly sprinkle the coconut sugar on top
  9. Bake for about 45 minutes, until golden brown
  10. Let cool for 10 minutes
  11. Serve with your favorite homemade coconut ice cream!
Notes
* If you are making mini apple crisp (as pictured) shorten bake time as needed
