Don't Cave In: Easy Eggs

Ingredients
  • Coconut oil
  • Eggs
  • Bacon and vegetables (optional)
Instructions
  1. Preheat oven at 350 degrees
  2. Grease muffin or cupcake pan with coconut oil
  3. Crack an egg in each hole
  4. You can either leave the egg as is or scramble the egg with a fork.
  5. Add bacon and/or vegetables (like broccoli, peppers, tomatoes, spinach and onions)
  6. Place in the oven for 8 minutes
  7. The eggs should be removed when the yoke still looks slightly runny (be careful not to over cook or your eggs will be rubbery)
  8. Let cool and store in the fridge (or freezer to keep longer)
Notes
To reheat, wrap or place a damp paper towel over your eggs and reheat in the microwave for about 15 second. Again, be careful not to over cook or your eggs will be rubbery.
