One of those classic dinners you probably remember having growing up is pot roast. Served with mashed potatoes and a thick brown gravy, this traditional American dish is not really something you would ever consider indulging in during your Paleo or Whole 30 adventures! J and I tried our hand at adapting this version of Pot Roast from Real Food Freaks, and while it wasn’t anything like a “classic” pot roast, it had amazing flavor and really hit the spot!
Tomato Balsamic Pot Roast
Ingredients:
- 1 chuck roast (appx. 3 lbs. but you can modify based on your needs!)
- 1 onion, diced
- 3 garlic cloves, diced
- 1 can fire roasted tomatoes
- 3/4 cup balsamic vinegar
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. chili powder
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. paprika
Directions:
- Place onion and garlic in the bottom of your slow cooker.
- Mix all of your spices in a bowl and rub into the roast on all sides. Put the roast on top of the vegetables.
- Add fire roasted tomatoes and balsamic vinegar to slow cooker. Cover and cook on low for 10 hours.
- The roast will be extremely tender! Plate using a slotted spoon and enjoy.
