Don’t Cave In: Tomato Balsamic Pot Roast

One of those classic dinners you probably remember having growing up is pot roast. Served with mashed potatoes and a thick brown gravy, this traditional American dish is not really something you would ever consider indulging in during your Paleo or Whole 30 adventures! J and I tried our hand at adapting this version of Pot Roast from Real Food Freaks, and while it wasn’t anything like a “classic” pot roast, it had amazing flavor and really hit the spot!

Tomato Balsamic Pot Roast

Ingredients:

  • 1 chuck roast (appx. 3 lbs. but you can modify based on your needs!)
  • 1 onion, diced
  • 3 garlic cloves, diced
  • 1 can fire roasted tomatoes
  • 3/4 cup balsamic vinegar
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. chili powder
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. paprika

Directions:

  1. Place onion and garlic in the bottom of your slow cooker.
  2. Mix all of your spices in a bowl and rub into the roast on all sides. Put the roast on top of the vegetables.
  3. Add fire roasted tomatoes and balsamic vinegar to slow cooker. Cover and cook on low for 10 hours.
  4. The roast will be extremely tender! Plate using a slotted spoon and enjoy.
