Some nights after a long day at work, neither J nor I are in the mood (or have the energy!) to cook an extravagant meal. Sometimes when we order out, but finding healthy delivery options can be difficult, not to mention expensive.
These Paleo friendly chicken tenders are super easy, use ingredients we always have in the house to make a great last minute meal.
Paleo Chicken Tenders

Ingredients
- 1 lb chicken tenders (or chicken breast cut into strips)
- 1 egg
- ½ cup almond meal
- ½ tsp salt
- ½ tsp garlic powder
- ½ tsp onion powder
Instructions
- Preheat oven to 425
- Line a cookie sheet with parchment paper
- Combine almond meal and all spices on a plate
- In a separate shallow dish, beat the egg
- Dip the chicken in egg, then dip in almond meal mixture, making sure the whole piece is coated. Place on cookie sheet and repeat all chicken tenders
- Bake for 9 minutes, flip and bake for 9 more minutes
Notes
For extra crispy chicken tenders, layer a cooling rack on top of the parchment paper and place the tenders directly on the rack
