There is something absolutely magical about a creamy broccoli Alfredo sauce. The crunch of the broccoli and the creamy Alfredo has been a favorite combination of mine for years, and one I have seriously missed since beginning my paleo journey. It never occurred to me, until recently that I could easily recreate this dish without using any dairy. But after a little trial and error I was able to whip up a simple, yet delicious paleo version of my favorite Italian meal. While I will admit that this Alfredo sauce is not as rich and creamy as my favorite version down in the North End, it comes pretty close and leaves me feeling much better afterwards. Try serving over spaghetti squash instead of chicken for a “pasta” dish.

- 2 chicken breasts, diced
- 1/2 cup of coconut milk, from a can
- 1 large head of broccoli, chopped
- 1/2 yellow onion, chopped
- 1/8 cup of vegetable broth
- coconut flour
- olive oil
- garlic powder
- basil
- dash of salt
- dash of pepper
- Mix diced chicken, olive oil, salt, pepper, garlic powder, and basil in a plastic bag until coated evenly
- Saute in a pan over low to medium heat, until thoroughly cooked
- Steam the broccoli in the microwave to your desired firmness (about 4 minutes in a bowl with some water, covered with a plate)
- In a pan, add broccoli, onions, coconut milk, vegetable broth, and some more salt, pepper, garlic powder, and basil
- Saute over low to medium heat
- Add coconut flour as needed to help thicken the sauce, but don’t add too much as the sauce should be somewhat thin
- Combine liquid mixture and broccoli with chicken
