If you’ve been following along, you know that I am a sucker for dessert. Unfortunately, one of the cardinal rules of Whole 30 is that you aren’t supposed to substitute a dessert for a dessert – even if it does follow Whole30 standards. Since J and I tend to eat dinner a bit early, I’ve been trying to find a snack that is after dinner friendly as opposed to the nuts and dried fruit I will sometimes snack on during the day at work.
While we were at J’s dad’s surprise party, we were talking to a family friend whose niece has also been doing Whole30 and Paleo, and she told us about a snack that she makes that always seems to be the hit of the party! I decided to make it my own by cutting out some ingredients so it is extra healthy and even more simple. This is a quick fix if you’re in the mood for something sweet.
- 1 banana
- Almond butter – you can buy it pre-made or make your own!
- Slice your banana into an even amount of round slices – about ¼” to ½” thick
- Spread a desired amount of almond butter on one slice, and use another to make it into a “sandwich”
- Place your banana bites in the freezer for a half hour. Mine were in there a little long so they were extra cold when they came out. You can keep them in there in a sealed container for a snack all throughout the week!
