As I’ve mentioned before I often crave Asian cuisine at least once a week. Unfortunately it is very difficult not only to order Paleo friendly Asian foods, but also to find recipes and cook them. I came up with this recipe when J and I were looking for an Asian inspired dish full of veggies and not noodles. J will tell you the best thing about this dish is that it is all cooked in one pan, which makes for a very easy clean up– but my favorite part is that it is really quick and easy to make!

Paleo Asian Fusion
Ingredients:
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic
- 1 Tbsp minced ginger
- 1 lb chicken breast
- 1/4 cup raw coconut aminos
- 1 bag of organic brocoli slaw
- Frozen or fresh stir fry vegetables of your choice
Directions:
1. Prepare chicken and dice into cubes
2. Heat wok or skillet over high heat
3. Add sesame oil, ginger and garlic, and sauté for 1 minute
4. Add chicken and cook, stirring frequently, for 4 minutes, or until the chicken is mostly cooked
5. Add in stir fry vegetables of your choice (I used a premixed bag of snap peas, carrots and mushrooms); sauté for 2 minutes
6. Add in broccoli slaw
7. Pour in 2 tbsp coconut aminos (non-Paleo friends, you can also substitute for soy sauce)
8. Cook 2-3 minutes, brocolli softens slightly
9. Remove from heat and serve
