I grew up eating piles of peppermint bark around the holidays. So this year, I packaged my Paleo trail mix bark in cute little cellophane bags, tied them with a big bow and added homemade gift tags as a little gift for coworkers, neighbors and a few others. This little melt in your mouth treat was such a hit that I decided to try my hand at a few more Paleo friendly combinations.
In my mind just about everything goes with chocolate, so I took a look in the fridge and pantry for fun and unexpected toppings. I opted for Pomegranate arils (left over from salad topping) and finely shredded coconut! Together they create a decadent flavor combination, and they look gorgeous too!

- 4 cups dark chocolate chips
- ⅓ cup pomegranate arils
- ⅓ cup unsweetened finely shredded coconut
- Place half of the dark chocolate chips in a microwave bowl and cook for 5-6 minutes, stirring frequently, until melted
- Line two baking sheets with parchment paper
- Pour melted dark chocolate onto lined baking sheet and spread the chocolate into a rectangle (the chocolate can be as thick/thin as you want based on preference)
- Sprinkle pomegranate arils and shredded coconut on the chocolate
- Place the baking trays in the freezer until hard
- Break the chocolate into pieces and enjoy!
