This past weekend J, Charlie and I joined a group of friends and drove out to Nashoba Valley Winery for a full day of all things fall. We decked ourselves out in plaids and spent the day enjoying the perfectly crisp call weather on the vineyard. Activities included apple picking, a picnic in the orchard and lots of apple cider. If you are in the Boston area and looking for a place to go apple picking, wine tasting or relax with a picnic, I highly recommend Nashoba Valley Winery. The apple orchard and picnic grounds are also dog friendly, so even Charlie got to join in on the fun!
Since we left the orchard with a bundle of freshly picked apples, I’ve been in the kitchen recreating my favorite fall recipes. First up is an oldie but goodie, Apple Cinnamon Muffins! Enjoy them with a cup of coffee for breakfast or a tall glass of almond milk before bed!
- 2¼ cups almond meal
- 4 eggs
- 2 apple
- 1 banana, ripe
- ¼ cup coconut oil, melted
- ⅓ cup water
- ½ tsp baking soda
- 1 heaping tbsp cinnamon
- Preheat oven to 350 degrees
- Mash the banana in a large bowl
- Core the apples and pulse in a blender until pureed
- Add the apples and all wet ingredients to the bananas, mix well
- Mix in the dry ingredients using an electric mixer
- Line a muffin tin or grease using coconut oil
- Fill the muffin tins
- Bake for 20 minutes
